Got thin sliced chicken breasts to avoid having to pound them OR pound to about 1cm thick. Coated in egg and a mixture of 3/4 panko + 1/4 EverCrisp (from Amazon) + salt, pepper and paprika. Sautéed in olive oil.
Sauce was 1/2 cup dry red wine, 1 package raspberries, and ~1/4 cup cherry jam, a dash of balsamic vinegar, a dash of dark soy sauce, juice of half a lemon, and some rosemary. Cooked on a low boil until reduced to a thick sauce. Can also add diced shallot.
Alternate coating: Equal parts coconut flour, King Arthur Keto Wheat, Panko, and Italian Bread Crumbs with a couple of tablespoons of EverCrisp.
Or: 50/50 Panko and bread crumbs....
Alternate sauce: 1/2 cup Ikea Lingonberry Jam (or other jam), 1/2 cup red wine, 1/4 cup tangerine or orange juice, 1/2 cup raspberries, mashed + a drizzle each of Maya Kamal red chile sauce and balsamic vinegar.
