This is one of our favorite dinners.
Trim chicken breasts and slice almost all the way through. Open them up like a book. Saute to get a bit brown - in this case in the bacon grease.
Top with a form of pork product (bacon, prosciutto, etc.
Then top that with roasted sweet or hot peppers or apples depending on the flavor profile. Then with cheese.
Bake until cheese is bubbly and chicken is cooked throught. Serve with a salad or your favorite veggie.
In this case we used apples and gouda. But we might easily use an Gruyere and roasted red bell peppers. Super fast and easy.
