In all cases, I make them in a shakable bottle so I can get good emulsion. I don't worry about adding the ingredients slowly, I just shake the heck out of them once everything's in the bottle.
Scant half cup good olive oil
Just over 1/4 cup of good balsamic vinegar
1 teaspoon brown mustard
Scant half cup neutral oil (vegetable, peanut, etc.)
Just over 1/4 cup of orange blossom vinegar
1 tablespoon pomegranate syrup
1/2 teaspoon brown mustard
Scant half cup neutral oil (vegetable, peanut, etc.)
Just over 1/4 cup of Champaign vinegar
1 teaspoon Dijon mustard
1/4 teaspoon sesame oil
1 teaspoon Italian herbs (dried or, even better, the "lightly dried" kind you find in little cups in the vegetable section of the grocery store)
