Made the stock by searing a pack of chicken wings, then adding carrot, onion, shallot, apple, bell pepper, celery, salt, Herbes de Provence, peppercorns, lemon juice, and other good stuff + water. Let it burble for ~3 hours.
Strained the stock. Added onion, leek, celery, mushroom, parsley, thyme, chile garlic paste, Worcestershire sauce, Texas Pete, lemon juice and let cook for ~1/2 hour. Then added low carb orzo.
About the time we added the orzo, we rendered some pancetta and cooked diced (1 inch dice) chicken in it to get it a bit brown. Added the chicken and pancetta to the pot and let cook until done. Added a bit more sauce and lemon.
