Clementines aren't in season so I used blood oranges. Was short on vodka and didn't see the point in using an alcohol with little flavor, so used a white tequila. Bourbon would have been great also, I think.
Also since our salmon was still frozen in the middle, I baked it as 350 for a few minutes before switching to broil. Came out perfectly.
Since it's a Friday in Lent and animal fats are OK but not animal flesh, I rubbed the asparagus with duck fat, then sprinkled with salt and pepper.
