Started by cutting chicken breasts into thirds, then sautéing them in olive oil with some salt and pepper until they were golden brown.
Meanwhile, we started the sauce with 1/4 stick butter. The first ingredient was ~1/4 cup of diced red onion. We then added raspberries (1/3 pack) and blackberries (1/3 pack) and ~ 1/4 cup leftover pomegranate arils. We then added a single of red wine (19 Crimes), Pom Wonderful pomegranate juice (1/4 cup), pomegranate syrup (1/4 cup), Teaspoon of orange blossom honey, 1/4 cup almond flour. Spiced with a little cinnamon, turmeric, nutmeg, salt, pepper, and ground Aleppo chile, and Zaatar, and Xawaash (all to taste).
Let the sauce reduce, then pour over the chicken and let cook and thicken....
Salad has tart (no sugar added) tart cherries, sliced almonds, and crumbled goat cheese. Diced pecans are sprinkled over the plate.
