Strawberry Soup (Cold)

15 Minutes start to finish

Serves 6 to 8

Ingredients:

  • 2 Pints of strawberries washed and hulled.

  • 1 Cup half and half

  • 1 Cup sour cream

  • 1/3 Cup sugar

  • 2 Tablespoons lemon juice

Directions:

  1. In a blender or food processor puree strawberries.

  2. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice.

  3. Stir until well combined.

  4. Chill

  5. Serve with a garnish of mint leaves.
