Instant Pot
Tools: instant pot, 1.5 quart flan pan, mixing bowl, Silicon trivet with handles and 2 cup glass measuring cup.
Use instant pot with 3 cups water on bottom under trivet.
or
Sous Vide Cooker
Tools: Sous Vide Cooker, Microwave, Mason Jars (8-4oz or 4-8 oz), Mixing bowl, and 2 cup Glass Measuring Cup.
1. Fill Sous vide cooker with water and start heating to 185°F or 85°C
2. Caramel sauce (Make in the microwave)
enough for:2 - 1.5 quart flan Pans in instant pot.
or 8-4oz or 4-8 oz mason jars.
1 Cup Granulated Sugar
1/4 Cup Water
Mix sugar and water in glass measuring cup to moisten the sugar
Microwave for 5.5 minutes.
Pour evenly into Mason Jars or flan pan and Swirl to coat bottom and sides
3. Flan custard (Good for 1 Instant Pot 1.5 quart flan pan, make two batches if makeing 2 Flan Pans.
1/4 Cup Sweetened Condensed Milk
1 3/4 Cup Whole Milk
3/4 Cup Granulated Sugar
3 Whole Eggs
1 Egg Yolk
1/2 tbsp Vanilla Extract
Mix Ingredients for Flan custard in mixing bowl
Pour evenly into mason jars or flan pan over caramelized sauce
Put lids on jars or flan pan
4. 3 cups water into instant pot, Lower flan pan on trivet with handles
Pressure cook on high for 15 minutes, then Natural release 10 minutes
or
Lower jars into Sous Vide Cooker with water over the lids
Cook 1 hour @ 185°F or 85°C in Sous Vide Cooker
5. remove from cooker and Cool 1 hour.
6. Refrigerate 6 hours or overnight before serving
