Cake
2 cups sugar
2 cups flour
2 eggs
2 teaspoons vanilla
2 teaspoons baking soda
1 20 oz can crushed pineapple in natural juice
1.5 cups chopped walnuts (save 1/2 cup for sprinkling on top of icing)
Put all cake ingredients in a bowl except the nuts. Use the whole can of pineapple including the juices. Mix well. The batter will be a little bubbly when done. set aside. Chop the walnuts into little pieces and add to the batter. Mix again. Pour the batter into a greased and lightly floured 13 X 9 inch baking pan. Bake in preheated 350 oven for 25-35 minutes
Cream cheese frosting
1 8oz. cream cheese softened at room temperature
1 stick butter softened
1 lb pound box confectionary sugar
1 teaspoon vanilla
Beat cream cheese and butter together until well blended. Add confectionary sugar and vanilla and mix until well blended. Frost cake while hot. Serves10 servings.
(sprinkle 1/2 cup walnuts on icing)
