INGREDIENTS:

3# GREEN CORN MASA

3# GRATED JACK/MONTERRAY CHEESE

4 SMALL CANS OF DICED GREEN CHILI

1 QT OF MILK

1# FROZEN YELLOW CORN KERNALS


METHOD FOR CASSEROLE:

1. SPRAY BOTTOM AND SIDES OF PYREX

2. MIX GC MASA TILL SOFT AN PLIABLE

3. SPREAD 1/2” OF MASA ON BOTTOM OF PAN

4. SMOOTH WITH METAL SPATULA DIPPED IN WATER

5. SPREAD 3 CANS OF GC ON MASA

6. PAT DOWN WITH SPATULA

7. SPRINKLE 1# SHREDDED CHEESE ON TOP

8. PAT DOWN WITH METAL SPATULA

9. TOP WITH REMAINING MASA-SPREAD WITH METAL SPATULA DIPPING IN WATER

10. BAKE AT 350 FOR 1⁄2 HOUR

11. CHECK CENTER BY TAPPING FINGER...MASA WILL SPRING BACK

12. LET COOL

13. CUT IN LONG LOGS OR SQUARES AND SET IN A METAL PAN TO HEAT


METHOD FOR GC CREAM SAUCE:

1. PUT 1 QT OF MILK IN SAUCEPAN

2. ADD 1 CAN DICED GC CHILI

3. HEAT TO JUST UNDER BOILING POINT

4. BLEND SAUCE WITH EMULSIFIER OR PUT INTO BLENDER

5. THICKEN TO A CREAMY SAUCE ADDING CORN STARCH RUE

6. SPOON SAUCE OVER GREEN CORN PIECES

7. COVER TOP AND SIDES WITH SAUCE

8. TOP WITH SHREDDED CHEESE-EXTRA 1#

9. COVER PAN WITH SYRAN AND FOIL

10. HEAT IN 350 OVEN UNTIL CHEESE IS MELTED

11. SERVE WARM AND ENJOY!!
