Creamed Pearl Onions - Donna Snyder


Ingredients:

Pearl onions

2 T Butter

2 T Flour

1 Cup Milk

Small onion'

2 Garlic Cloves

1 Small bay leaf

1/2 Cup Grated Gruyere Cheese

1/2 Cup Grated Jarlsberg Cheese


Buttered baking dish


Topping

Buttered bread crumbs

Grated Cheese


Onions: Back east they sell boiling onions in big bins. Out west they sell them in tiny bags for a big price. A shortcut would be to buy them frozen, which is what I'd suggest, as they are already peeled and ready to go.


The Sauce:

Melt 2 Tablespoons of butter over low heat.

Once melted

2T of flour- add using a whisk and once that is combined let it cool down.


1 Cup milk - Slowly pour in while whisking.(pre-warming the milk keeps it from lumping)


Add a small onion with 2 garlic cloves stuck in it plus a small bay leaf.

Let that simmer a bit, stir to keep from lumping while it thickens


Remove Onion, cloves and bay leaf


Add 1 cup shredded cheese (half Gruyere & half Jarlsberg) whisk into the cream sauce


Butter a baking dish

Throw the pearl onions in

Pour the sauce over the pearl onions

Put some buttered bread crumbs on top

Put some shredded cheese on top


Bake at 350 until hot all the way through.
