Title of the project

Biochemical analyses and innovative use of hazelnuts in dairy enterprises

Aims of the project

The PhD thesis is focused on the evaluation of the management of the animals kept on dairy farms. The main activities are listed below.

1. The monitoring of the farms will be based on the chemical-physical evaluation of soil, the area attitude, the cultivation method and on the presence of irrigation and fertilization systems.

2. The monitoring of the hazelnuts and milk used to make new products will focus on the evaluation of the basic chemical-physical composition and qualitative analyses.

3. The qualitative monitoring of the new product will focus on the evaluation of the chemical-physical composition and on the qualitative analyses. The sensory analysis of the product will be necessary to evaluate the organoleptic characteristics and consumer liking.
