Title of the project

Mixed starter yeasts as a biotechnological tool to produce wine with low alcoholic content

Aims of the project

The research project aims at the development of a mixed starter, using non-Saccharomyces yeasts in combination with S. cerevisiae, to produce wine with reduced alcohol content and, at the same time, with improved aromatic characteristics. A wide phase of screening of non-Saccharomyces wild strains, based on the evaluation of different parameters of oenological interest, such as enzymatic activities, fermentative performance, production of aromatic compounds, starter formulation, will be useful to select the strains possessing the most interesting traits. The validation of mixed starter culture selected at laboratory scale will be performed by testing the starter during pilot scale vinification.
