Title of the project

Smart plant management to improve the quality and sustainability of bakery products

Aims of the project

This PhD project aims to investigate technologies and systems to produce bakery products with specific reference to new plant and organizational solutions capable of optimizing the process and improve the connection between machines with a view to Industry 4.0, energy efficiency and lower environmental impact.

The research takes its cue from the state of the art, and from the critical aspects present in the current organization and management of bakery product production processes, mainly due to the lack of interconnection between the machines used and their poor adaptability to raw materials other than conventional ones (mainly gluten-free). Since the machines often cannot exchange data with each other, there is no possibility of managing the entire process in an "intelligent" way.

The research has the following specific objectives:

• the study and research of innovative and intelligent solutions for the bakery industry;

• the co-design of a plan of experimental activities between SAFE/UNIBAS and the partner company (“Il Fornaio” in Genzano di Lucania - PZ);

• industrial research on methodologies in plant improvement at the “Maclab1” laboratory of UNIBAS;

• the validation of the results at the partner company and possibly at other interested companies;

• verification of the impact of research and innovations on the production process, energy costs and corporate sustainability, in collaboration with a university partner.
