This classic subway tile bathroom can be created for $2,000 if you do much of the work yourself.

This is what the John Bridge forum recommends and they do say that different brands means difference quality and there are some that they definitely don't recommend. For those that don't know who John Bridge is, he wrote a book about how to install the schluter products, so I think he may know what he's talking about.
This is there recommendation in the order listed not to find them. also comments by http://floorelf.com/unmodified-thinsets-a-users-guide
Ditra-Set This is the best product with which to set anything over kerdi or ditra – it was specifically manufactured for that purpose. The availability is extremely limited, however.
VersaBond (Home Depot)
Laticrete 317 or Laticrete MegaBond. (272 is the premium, finer sand=creamer, 317 is under that)
Premium Plus
Mapei-Kerabond (Lowes has just Mapei) (not Mapei-Keraflor) Kerabond: This is considered Mapei’s premium unmodified thinset. It works very well for any Schluter product
Custom blend seems to be universally frowned upon do not use Custom Blend '
