1 lb. ground turkey (or beef)1 medium onion, chopped1 medium green bell pepper, chopped1 (14.5-oz.) can diced tomatoes1 (14.5-oz.) can crushed tomatoes1 (14.5-oz.) can chili beans, undrained1 (14.5-oz.) can black beans, rinsed and drained1 (14.5-oz.) can white beans, rinsed and drained1 (14.5-oz.) can whole kernel corn, drained1 (2.5-oz.) can diced green chiles1 tbs. chili powder1 tsp. cumin
1 tsp. dried oregano
1/4 tsp. cayenne pepper
In a Dutch oven, cook the turkey, onion, and green pepper over medium heat until meat is no longer pink; drain and return to pot. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Serve with shredded cheese, sour cream, sliced green onions, tortilla chips, and/or cornbread.
Variations
Use kidney and/or pinto beans in place of the black and/or white beans.
Use condensed tomato soup, stewed tomatoes, or 8 oz. tomato sauce in place of the crushed tomatoes.
Use 1 to 2 tbs. taco seasoning in place of the spices.
Use chunks of chicken breast in place of the ground turkey OR omit turkey and add shrimp during the last 5 minutes of cooking time.
