2 c. flour
1 c. oats
1 1/2 tsp. baking soda
1 tsp. salt
1 c. sugar
1 c. butter
2 eggs
1/2 c. buttermilk
1 c. mashed bananas (about 2 medium bananas)
1 tsp. vanilla
1/2 c. chopped nuts (optional)
1/2 c. coconut flakes
2 c. semisweet chocolate chips, divided
Preheat oven to 350F. Grease and flour a 9x13-inch pan.
In a medium bowl, mix flour, oats, baking soda, and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, bananas, and vanilla. Add flour mixture and mix well. Fold in nuts, coconut, and 1 c. chocolate chips.
Spread batter in prepared pan. Sprinkle with remaining 1 c. chocolate chips. Bake at 350F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
