2 1/2 c. all purpose flour1/2 c. sugar1/2 c. packed brown sugar1 tbs. baking powder1/2 tsp. salt1/4 tsp. cinnamon3 large ripe bananas1 c. milk1 large egg1 tsp. vanilla extract3 tbs. canola oil3/4 c. peanut butter1 c. chocolate chipsPreheat the oven to 350°F and line and/or grease 18 muffin cups.In a large bowl, combine the flour, sugar, brown sugar, baking powder, salt, and cinnamon, and set aside.
In another large bowl, combine the mashed bananas, milk, egg, vanilla, oil, and peanut butter, and mix well.
Gradually mix in the dry ingredients until just moistened, then fold in the chocolate chips.
Bake for 22-25 minutes or the muffins are slightly golden and a toothpick comes out clean.
Allow to cool a bit before removing from the pan, then either serve warm or allow to finish cooling.
