Preheat oven to 250F. Line baking sheets with parchment paper.
In a large bowl, combine oats, nuts, brown sugar, and salt.
In a measuring cup, combine maple syrup or honey and oil. Pour over oat mixture and stir to coat evenly.
Spread on baking sheets in an even layer about 1/2 inch thick. Bake at 250F for 50 minutes or until golden.
Remove from oven and let cool. Crumble into bite-sized pieces and add raisins, chocolate, and coconut. Mix to distribute evenly. Makes about 8 cups.
Variations
Replace nuts with any combination of peanuts, cashews, sliced almonds, etc.
Replace raisins with any combination of dried fruit, cut into small pieces if necessary.
Replace chocolate chunks with yogurt drops, M&Ms, Reese's Pieces, etc.
