In another bowl, mash the banana and whisk in the egg, milk, oil, and vanilla. Pour the egg mixture into the flour mixture and stir just until moistened. Stir in chocolate chips, if desired. Let the batter stand for 5 minutes.
Heat a lightly oiled griddle over medium-high heat. Use a 1/4-cup measuring cup to drop batter onto the griddle. Cook until bubbles form and the edges are dry, about 2 minutes. Flip, and cook until browned on the other side. Repeat with remaining batter.
Variation: Replace banana with 1/2 c. applesauce for Oatmeal Applesauce Pancakes.
