1 1/2 c. chocolate cookie crumbs2 tbs. white sugar1/4 c. butter, melted1/4 c. semisweet chocolate chips1/4 c. heavy whipping cream3 (8-oz.) pkg. cream cheese1 c. white sugar1/3 c. unsweetened cocoa powder3 eggs1 tsp. vanillaPreheat oven to 350F. Lightly grease a 9-inch springform pan.In a small bowl, mix together crumbs, 2 tbs. sugar, and melted butter. Press onto the bottom (and 1 inch up the sides, if desired) of the prepared springform pan. Bake at 350F for 10 minutes. Allow to cool. Reduce oven temperature to 325F.Meanwhile, in a small saucepan, heat cream and chocolate chips, stirring constantly, until chips are melted. Remove from heat.
In a large mixing bowl, beat cream cheese and 1 c. sugar until smooth. Add cocoa and beat well. Add eggs and vanilla and beat on low until just blended. Stir in reserved chocolate mixture. Pour over crust and bake at 325F for 45-50 minutes or until center is just set.
