1 1/2 lbs. ground beef1/2 c. crushed unsalted crackers
1 egg, beaten
1/2 c. barbecue sauce
1 tsp. mustard
1 tbs. honey
1/2 tsp. seasoning salt
Ground black pepper
Additional barbecue sauce, for topping
Preheat oven to 350F. In a large bowl, mix the ground beef, cracker crumbs, egg, 1/2 c. barbecue sauce, mustard, honey, seasoning salt, and pepper. Mix well using a large wooden spoon or your hands. Avoid overmixing which can cause meatloaf to be tough.
Shape into one large loaf or as many as 6 smaller loafs of about the same size and place on a foil-lined pan.
Bake uncovered at 350F for 30 minutes. Spoon remaining barbecue sauce over loaves and continue cooking for another 15-30 minutes or until done.
