1/2 c. dry bread crumbs1/2 c. grated Parmesan cheese1 tsp. Italian seasoning1 egg4 skinless boneless chicken breast halves, about 1 lb.1 (15-oz.) jar marinara sauce1/2 c. shredded or 4 thin slices Mozzarella cheesePreheat the oven to 400F. Spray a 9x13-inch baking dish with cooking spray. Combine bread crumbs, Parmesan cheese, and Italian seasoning in a shallow bowl. In another shallow bowl, beat the egg slightly with a fork.Pound each chicken breast half to about 1/2-inch thickness. Coat with egg, then with bread crumb mixture and place in baking dish. Bake for 20-25 minutes in preheated oven or until juices run clear. Meanwhile, cook linguine according to package directions and heat marinara sauce in the microwave or on the stovetop.Sprinkle each chicken breast with Mozzarella (or place a slice on top) and return to the oven for 2-3 more minutes to melt cheese. To serve, divide linguine among serving plates. Top with chicken and marinara sauce.
