Chicken & Rice Bake *

1 tbs. butter, margarine, OR olive oil
1 c. chopped onion
1 c. chopped celery
4.3-oz. box wild rice mix with seasoning packet
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
1 lb. boneless skinless chicken breasts or thighs OR 1 lb. boneless pork chops

Heat butter in a large skillet and cook onion and celery until slightly softened. Add rice mix, soups, and water to skillet and stir to combine. Pour into baking dish. Top with chicken or pork. (Double wrap with foil and freeze if desired. Thaw completely before baking.) Bake uncovered at 350F for 1 hour or until meat is cooked and rice is tender.
