Zucchini Bread *

3 eggs, well beaten2 c. sugar1 tbs. vanilla1 c. oil2 c. shredded zucchini3 c. flour1/2 tsp. baking powder1 tsp. baking soda1 tsp. salt1 tsp. cinnamon1/2 c. chopped nuts1 c. coconutBeat eggs until light and fluffy. Add sugar, vanilla, and oil. Blend well. Stir in zucchini. Stir together flour, baking powder, baking soda, salt, and cinnamon. Blend with egg mixture. Fold in nuts and coconut. Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350F for 1 hour (or 45 minutes if using smaller pans).
