Pepper Rice & Confetti Beef

1 1/2 c. chicken broth

1 1/2 c. uncooked white rice1/2 lb. beef sirloin, thinly sliced1 tbs. vegetable oil1/2 red bell pepper, thinly sliced1/2 yellow bell pepper, thinly sliced1/2 green bell pepper, thinly slicedSalt and pepper to taste1/2 c. chopped green onion1/4 c. Dijon mustard3 tbs. honeyIn a medium saucepan, bring chicken broth to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes.

Heat oil in a large skillet over medium heat. Cook the beef and bell peppers until beef is evenly browned. Season with salt and pepper.

Stir Dijon mustard and honey into beef mixture. Stir green onions into cooked rice. Serve peppers and beef over the rice.
