1 lb. boneless, skinless chicken breasts OR rotisserie chicken, cubed1 tbs. olive oil (if using uncooked chicken)1 prebaked Italian bread crust1/4 c. prepared pesto1/2 c. canned black beans, rinsed and drained1 large tomato, chopped OR 1 (14.5-oz.) can petite diced tomatoes, drained1 c. shredded Mozzarella cheese1/3 c. shredded Parmesan cheeseIn a large skillet, cook chicken in oil over medium heat for 10 to 15 minutes or until juices run clear.Place the crust on a lightly greased 12-inch pizza pan. Spread with pesto; top with the chicken, tomato, beans, and cheeses. Bake at 400F for 10 to 12 minutes or until cheese is melted. Serves 6.
