1 cucumber, shredded and drained very well, dried with paper towels
4-5 garlic cloves, minced
1 c non-fat plain Greek yogurt
1 tsp vinegar or white wine vinegar
1 Tbsp olive oil
1 tsp salt, divided in half
1/4 tsp ground white pepper
Place the drained, dry cucumber in a bowl with 1/2 tsp salt.
Add yogurt, minced garlic, vinegar, olive oil, the other 1/2 tsp salt, and white pepper. Stir to mix. Refrigerate.
Serve with chopped vegetables and/or warm pita bread.
