3 cloves garlic, minced
1 Tbsp butter or margarine
1 can (48 oz) chicken or beef broth
19 oz frozen cheese tortellini
1 pkg frozen chopped spinach
2 cans (14 ½ oz each) stewed tomatoes, undrained, cut into pieces
In large saucepan, over medium-high heat, cook garlic in butter for 1 to 2 minutes. Add broth and tortellini. Heat to a boil; reduce heat and simmer 10 minutes. Add spinach and tomatoes; simmer 5 minutes longer. Sprinkle each serving with grated parmesan cheese.
