Healthy steel-cut oatmeal that cooks overnight.
1-1/2 C steel cut oatmeal (not rolled oats)
4 C water
2 C milk, half & half, or cream (you can use a blend of any of these if you like)
1/4 C brown sugar or molasses
1 or 2 medium apples, peeled and diced
1 tsp ground cinnamon
Spray the inside of your crockpot stoneware with cooking spray.
Place oatmeal, water, milk, brown sugar and cinnamon in crockpot. Cover and set on low for at least 6-8 hrs (it definately cooks by 6 hrs). About an hr before serving, add diced apple to the crockpot. Stir, cover and cook another hr. It was actually sweet enough so that we didn't have to add anything else when we ate it. This can also be done with other fruits like bananas, peaches, etc.
