Adapted from King Arthur Flour
Makes 2 loaves
3 tablespoons butter or margarine, softened
3 tablespoons sugar
2 teaspoons vanilla
1 egg. slightly beaten
1 1/4 cups milk, warmed but not boiled
1 teaspoon cinnamon
1 1/2 teaspoons salt
1/2 teaspoon baking powder
4 cups King Arthur Unbleached All-Purpose Flour
1 tablespoon instant yeast
1 cup cinnamon chips
Place butter, sugar, vanilla, and egg in a large bowl. Pour warm milk over and stir to melt butter. Stir gently till fairly well blended.
In another large bowl, blend the cinnamon, salt, baking powder, flour, and yeast. Stir into the wet ingredients and mix till you have a wet dough. Turn onto a floured board and knead gently until well mixed, about 5 minutes. Turn into a greased bowl; cover and let rise till doubled.
While dough is rising, place the cinnamon chips into a food processor or blender and chop them to make them smaller and chunkier. Set aside.
Punch down dough, then divide into two balls of dough. Flatten each ball of dough and shape into a rough rectangle about 7 " long. Sprinkle half of the chopped cinnamon chips over each rectangle and roll into a loaf shape, tucking end underneath, and place into greased loaf pans. Cover and let rise for 30 minutes.
Bake at 350 degrees for 30 minutes; then check and turn in the oven for another 10 minutes or until bread tests done.
