1Tbsp olive oil
1 pound cooked breakfast meat (sausage or diced ham)
1/2 small yellow onion, diced
1 red bell pepper, seeded and diced
1 30-oz bag frozen diced hash brown potatoes, thawed and drained
8 oz shredded cheddar cheese
3 Tbsp chopped chives
6 large eggs, beaten
1/2 cup whole milk
salt and pepper to taste
Preheat oven to 375.
Lightly grease a 9x13" baking dish and set aside.
In a skillet, heat olive oil and saute onions and pepper for 5-6 minutes, until they just begin to carmelize. Season with salt and pepper and pour into a large mixing bowl.
Add the chopped sausage or ham to the bowl with the onions and peppers and toss.
Add diced potatoes, 2/3 of the shredded cheese, chives, and salt & pepper to the bowl and gently toss to combine.
In another bowl, whisk together the eggs and milk, and pour mixture over the meat/vegetable mixture. Fold together just until combined.
Pour mixture into prepared baking dish and sprinkle top with remaining cheese.
Cover tightly with with foil and bake for 35 minutes. Remove foil and continue to bake an additional 10 minutes or until eggs are set. Serve warm.
