1/8 cup red onion, chopped
1 jalapeno pepper, seeded & chopped (wear gloves)
1 clove garlic
1 Tbsp fresh lime juice
1 Tbsp red wine vinegar
1 cup olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground cumin
1 cup cilantro, chopped & tightly packed
2 cups Italian parsley, chopped & tightly packed
Add all ingredients to food processor; Pulse until mixture reaches desired texture.
