<recipe from my mom>
1 1/2 tsp dry yeast
1 cup warm water
2 cups flour
1 tsp salt
1 Tbsp olive oil
1 cup water
2 cups flour
(up to) 1 cup additional flour
Dissolve yeast in warm water. Wait till it bubbles; then add 2 cups flour, salt, and olive oil. Mix thoroughly in KitchenAid mixer.
Switch to dough hook on mixer. Add another cup of water and 2 cups flour; mix/knead until smooth, adding up to 1 more cup of flour to reach smooth consistency and dough comes cleanly away from sides of bowl.
At this point, you can freeze all or part of the dough for future, refrigerate for up to 3 days before using, or let rise to use immediately for pizza.
