6 medium potatoes
1 stick butter
2 cups sour cream
2 cups grated cheddar cheese
1 tsp salt

Cook potatoes the day before with skins on. Cool overnight and peel them the next day. Grate potatoes into large mixing bowl. Mix with butter, sour cream, cheddar cheese, and salt. Spread into an oven-safe serving dish. Bake uncovered at 350 degrees for 35 minutes or until bubbling.
