2 cups finely diced ham
3 hard-boiled eggs, chopped (optional--I leave these out)
3 Tbsp sweet pickle relish
1/4 Cup mayonnaise
2 Tbsp minced green onion
2 Tbsp minced red green pepper
2 Tbsp finely chopped celery
1 Tbsp chopped fresh parsley
2 tsp dijon mustard
1 Tbsp lemon juice
1/2 tsp salt
1/4 tsp cayenne pepper
ground black pepper to taste
Mix everything but the salt, pepper, and cayenne in a large bowl. Add cayenne, salt, and pepper to taste. Serve chilled.
