This is modified from a Sandra Lee episode on the Food Network.
1 container of strawberries, washed and sliced
3T powdered sugar
8 ounces mascarpone cheese (substitute: 8 ounces softened cream cheese + 1/4 cup whipping cream)
1/4 cup sugar
1 container extra-creamy whipped topping, thawed (substitute: low-fat or fat-free)
1/2 cup almond biscotti, crushed (substitute: graham cracker crumbs)
2 tablespoons sliced almonds, toasted
In a medium bowl, combine strawberries and powdered sugar. Set aside to macerate. In a medium mixing bowl, use a hand mixer to mix mascarpone cheese and sugar until creamy. (I've used the listed substitution plus the sugar as well...less calories, but still yummy.)
Whisk in thawed whipped topping. (Ditto on this substitution.) Divide half of the mascarpone cream among 6 parfait glasses or large martini glasses. Top with strawberries. Sprinkle with crushed biscotti and top with remaining mascarpone cream. Scatter almonds over and serve. (If graham cracker crumbs are used it tastes like a strawberry cheesecake.)
