1 box "long grain & wild rice" (I use Uncle Bens)
1 boneless chicken breast
1 quart strong chicken broth
1/2 C chopped onion
1/2 C chopped celery
1/4 C shredded carrots
Prepare the wild rice according to package directions, using stovetop or microwave, whichever you prefer.
While the rice cooks, grill the chicken breast about 7 minutes on each side, till done. Top into 1" squares.
(If you don't have any homemade stock, you can use canned chicken broth and add chicken bouillon cubes to make the broth stronger.)
Heat the broth in the pot, then add the remaining ingredients. Simmer for an hour or more to blend the flavors.
Serves 4-6.
