Instructions
Prepare the Marinade:
In a large bowl, whisk together the coconut milk, soy sauce, brown sugar, curry powder, turmeric, garlic, coriander, and lemongrass. Add salt and pepper to taste.
Marinate the Chicken:
Add the chicken strips to the marinade and mix well to coat. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
Make the Peanut Sauce:
In a small saucepan, combine peanut butter, coconut milk, soy sauce, red curry paste, lime juice, and sugar. Heat gently over medium heat, stirring constantly until the sauce is smooth and slightly thickened. Add water if needed to adjust the consistency. Taste and adjust seasoning with more lime, sugar, or fish sauce as desired. Set aside.
Skewer and Grill the Chicken:
Thread marinated chicken strips onto skewers. Preheat a grill or grill pan over medium-high heat. Grill the skewers for 3–4 minutes per side or until the chicken is cooked through and slightly charred.
Serve:
Serve hot with the prepared peanut sauce on the side for dipping. Garnish with chopped peanuts, cilantro, and lime wedges if desired.
