This Stuffed Meatloaf is a hearty, comforting dish that elevates the classic meatloaf by adding a savory stuffing layer in the center. Juicy ground beef surrounds a flavorful core of seasoned stuffing, all topped with a creamy mushroom sauce. It’s perfect for family dinners, potlucks, or when you want to serve something that’s both nostalgic and satisfying.
1½ lb (680 g) lean ground beef
6 oz (≈170 g) stuffing mix
½ cup water
1 large egg
½ cup chopped onion
1 cup chopped mushrooms
10¾ oz (≈305 g) can condensed cream of mushroom soup
1 tablespoon Worcestershire sauce
¼ cup ketchup
Salt and black pepper, to taste
Preheat your oven to 350 °F (175 °C).
In a large mixing bowl, combine the ground beef, egg, chopped onion, salt, and pepper. Mix until just combined—don’t overwork it.
In a separate bowl, prepare the stuffing by mixing the stuffing mix with ½ cup of water (or follow the package directions if different). Let it absorb the water for a few minutes.
Form the base layer: Press half of the beef mixture into the bottom of a greased loaf pan or shape it by hand on a lined baking sheet.
Add the stuffing: Spread the prepared stuffing evenly over the beef layer.
Top with remaining beef: Place the rest of the meat mixture over the stuffing and gently press around the edges to seal.
In a small bowl, stir together the condensed mushroom soup, Worcestershire sauce, and ketchup.
Spread the sauce over the top of the loaf evenly.
Bake uncovered for about 1 hour, or until the internal temperature reaches 160 °F (71 °C).
Rest the meatloaf for 10 minutes before slicing and serving.
Serve slices of this stuffed meatloaf with creamy mashed potatoes, roasted carrots or green beans, and dinner rolls to soak up the delicious mushroom topping. A fresh side salad also makes a great contrast to the warm, savory flavors.
