2 boneless, skinless chicken breasts (sliced horizontally)
1 cup all-purpose flour
2 eggs (beaten)
1 cup Italian-style breadcrumbs
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
1 cup marinara sauce (homemade or store-bought)
1 ½ cups shredded mozzarella cheese
4 hoagie or sub rolls (sliced and lightly toasted)
2 tablespoons olive oil (for frying)
Fresh basil or parsley for garnish (optional)
Prep the Chicken:
Slice chicken breasts horizontally to create thinner cutlets. Pat them dry with paper towels.
Bread the Chicken:
Set up a dredging station with three bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper in the third.
