1 English cucumber
Salt (for drawing out excess moisture)
½ cup cream cheese (about 110 g)
¼ cup mayonnaise (about 55 g)
½ teaspoon dried dillweed
½ teaspoon soy sauce
1 teaspoon mustard
A pinch of black pepper
6 slices of sandwich bread (white or whole wheat, crusts removed)
Prepare the cucumber:
Slice the cucumber into rounds, about the width of the bread. Lay the slices on a paper towel, sprinkle lightly with salt, and let them rest for 10 minutes. Afterward, pat them dry with another towel to remove any excess moisture.
Make the cream cheese spread:
In a small bowl, mix together the cream cheese, mayonnaise, dried dillweed, soy sauce, mustard, and a pinch of black pepper until smooth and well combined.
Assemble the sandwich stacks:
Spread the cream cheese mixture on three slices of bread. Stack cucumber slices over one of the spread-covered slices, then place a second spread-covered slice on top (spread side down). Repeat with a second layer of cucumber and top it off with the third bread slice, also spread side down. Each set will make 9 mini sandwiches.
Cut into bite-sized pieces:
Using a sharp knife, cut each sandwich stack into 9 small squares. Secure each with a toothpick for easy serving, if desired.

These are best enjoyed immediately or within 2–3 hours. To avoid sogginess, be sure the cucumber slices are properly dried.
