2 large croissants, sliced in half horizontally
4 large eggs
2 tablespoons milk or cream
1 tablespoon unsalted butter
Salt and freshly ground black pepper, to taste
Optional fillings:
Sliced cheese (cheddar, Swiss, gouda, etc.)
Cooked bacon or ham
Sliced avocado
Fresh spinach or arugula
Toast the Croissants
Preheat the oven to 350°F (175°C). Slice the croissants in half horizontally and place them cut-side up on a baking sheet. Toast in the oven for about 5 minutes or until they are lightly crisp and warmed through.
Prepare the Scrambled Eggs
In a bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
Heat a non-stick skillet over medium-low heat and melt the butter.
Pour in the egg mixture and gently stir with a spatula, continuously folding the eggs from the edges to the center until they are softly scrambled and just set.
Assemble the Sandwiches
On the bottom half of each toasted croissant, layer any optional ingredients such as cheese slices, crispy bacon, or avocado.
Spoon the freshly scrambled eggs on top of the fillings.
Add a handful of fresh greens if desired, and close the sandwich with the top half of the croissant.
Serve
Serve immediately while warm, either on its own or with a side of fruit salad, a smoothie, or breakfast potatoes for a more complete meal.
