This slow cooker Lemonade Chicken is a simple “dump-and-go” meal featuring tender chicken breast cooked in a sweet-and-tangy lemonade-based sauce. Using pantry staples like lemonade concentrate, brown sugar, ketchup, and vinegar, this dish is dairy-free, easily gluten-free with a flour substitute, freezer-friendly (both cooked and uncooked), and budget-conscious. It’s perfect for busy weeknights, postpartum prep, or long-term meal planning.
4 boneless, skinless chicken breasts
6 oz thawed frozen lemonade concentrate (about ¾ cup)
3 tablespoons brown sugar
3 tablespoons ketchup
1 tablespoon white vinegar (or rice wine vinegar)
2 tablespoons water
2 tablespoons flour (or gluten-free thickener like arrowroot or tapioca starch)
Optional garnish: lemon slices or wedges
Prepare Crock-Pot: Lightly spray the insert of your slow cooker with oil to prevent sticking. Place the chicken breasts inside.
Make the Sauce: In a bowl, whisk together the lemonade concentrate, brown sugar, ketchup, and vinegar until smooth. Pour this mixture over the chicken.
Cook: Cover and cook on Low for 4 to 6 hours or on High for 2 to 3 hours, until the chicken is fully cooked and tender.
Thicken the Sauce (about 30 minutes before it's done): In a separate small bowl, whisk the flour with water to make a slurry. Remove the chicken temporarily and turn the slow cooker to High. Stir in the slurry to the sauce to thicken it. Return the chicken to the pot, spoon the sauce over it, and continue cooking for another 30 minutes.
Serve: Plate the chicken over rice or steamed vegetables. Spoon extra sauce over the top and garnish with lemon slices if desired. Season with salt and pepper to taste.
Best with: Serve over steamed white or brown rice, mashed potatoes, or cauliflower rice. It also pairs nicely with side vegetables like steamed broccoli, green beans, roasted asparagus, or sautéed zucchini and squash.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. This dish also freezes well—either after cooking or as a “dump-and-go” freezer meal with all ingredients raw.
