15 sheets phyllo dough (½ package)
6 tablespoons melted butter
Cooking spray (for muffin tin)
4 large eggs
½ cup heavy cream
Salt and pepper, to taste
½ pound raw chorizo, cooked and crumbled
½ cup basil pesto (store-bought or homemade)
Preheat your oven to 375°F (190°C).
Spray a mini muffin tin with nonstick cooking spray.
Stack 5 phyllo sheets, brushing each layer with melted butter. Keep remaining sheets covered with a damp towel to prevent drying.
Cut the stacked sheets into approximately 3½-inch squares or rounds.
Gently press each square into the wells of the prepared mini muffin tin. Repeat until you have 24 phyllo cups.
Bake the phyllo cups for 8 to 10 minutes, or until the edges are lightly golden. Remove from the oven and allow them to cool completely in the tin.
In a medium bowl, whisk together the eggs and heavy cream.
Season the mixture with salt and pepper to taste.
If using chorizo or pesto, add about a teaspoon of your chosen filling to the bottom of each phyllo cup.
Carefully pour the egg and cream mixture over the fillings until each cup is just below full.
Increase the oven temperature to 400°F (200°C).
Bake the filled phyllo cups for 10 to 12 minutes, or until the egg mixture is fully set and slightly puffed.
Let the mini quiches cool slightly before serving.
