Potatoes – 4 cups cubed (about ½" pieces; use Yukon Gold or red potatoes)
Onion – ½ cup finely chopped (white or yellow)
Bell pepper – Optional, ½ cup diced (red or green)
Garlic – 1 clove, minced (optional)
Oil – 2–3 tbsp olive oil (or bacon drippings)
Salt & pepper – To taste
Water – ¼ cup (helps steam the potatoes)
Eggs – 4 large (optional)
Cheddar cheese – 1 cup shredded (optional)
Green onions – 2 tbsp sliced (optional garnish)
Bacon – ~4 strips, cut into 1″ pieces (optional)
(Optional) Cook bacon in a large skillet over medium-high heat until crisp. Remove and set aside, leaving about 2 tablespoons of drippings in the pan.
Sauté aromatics: Add onions (and bell pepper, if using) to the skillet. Cook for about 2 minutes until softened, stirring to coat them in the fat.
Add potatoes: Stir in cubed potatoes, garlic, salt, and pepper. Drizzle with oil (if needed), add water, then cover the skillet. Reduce heat to medium-low and cook for about 15 minutes until potatoes are tender. Stir only once or twice during this time to encourage browning.
(Optional) Add eggs: Make 4 small wells in the potato mixture. Crack one egg into each well. Cover and cook over low heat for 8 to 10 minutes, or until the whites are set and yolks are at your desired doneness.
(Optional) Top with cheese & bacon: Sprinkle shredded cheese and reserved bacon on top. Cover the skillet again for a minute or two to melt the cheese.
