The Health and Food Technology Course concentrates on health, the influence of food and its nutritional properties, and the dietary needs of individuals. It also focuses on the application of safe, hygienic and informed practices in food preparation.


Pupils are given the opportunity through a number of different units of work to develop essential life skills to allow them to thrive independently out with the school community and gain valuable skills for life.


It comprises of hands-on practical learning and theoretical work and also helps develop important skills such as creative thinking, problem solving, planning and organising.


The course includes the following units:


· Safety in the kitchen


· Hygiene in the kitchen


· Weighing and measuring


· Bacteria and food


· Farm to fork


· Nutrition


· Foods around the world


Course assessment


Assessment is completed at the end of units and can consist of either a written or a practical exam.


In S3 and S4

N 4/5 Health and Food Technology

This course has been developed to allow students to experience an experimental and investigative approach to develop knowledge and understanding of Food and Health whilst acquiring knowledge, understanding and skills to become informed food consumers. The skills gained are needed for life and are transferable to many different forms of employment.

Higher Health and Food Technology

The course allows candidates to develop and apply the knowledge and skills of research, analysis and evaluation in order to make informed food and dietary choices. Candidates develop their understanding of the properties of food in relation to food production, processing and the development of food products. The course uses an experiential, practical and problem-solving learning approach and promotes independence in learning. It uses real-life situations, and where appropriate, takes account of local, cultural, and media influences and technological innovations.


Higher Health and Food Technology is accepted by some university courses.


This course comprises the same topics as those studied at National 5 but extends on the learners prior knowledge.

N 4/5 Practical Cookery

This course aims to further develop pupils’ life skills and enhance their personal effectiveness in terms of cookery and to provide a set of skills for those who wish to progress to further study or work in the hospitality industry. Hospitality employ a significant proportion of the nation’s workforce and is the 3rd largest employer in Scotland.


This course also prepares pupils for life, by enabling them to learn how to plan, prepare and cook food for themselves and others. In addition, it also develops organisational skills, which have an application in a wide variety of contexts.


The course includes the following units:


· Cookery skills, techniques and processes.


· Understanding and using Ingredients.


· Organisational skills for cooking

N5 Practical Cake Craft

Cake production is part of the Scottish hospitality industry which is a vibrant and growing industry. This course is practical and relevant to the world of work. It enables candidates to develop a range of artistic techniques and to consolidate them through practical activities. Drawing on all aspects of design, such as shape, colour, texture, balance and precision, candidates are given the opportunity to produce a variety of individualised cakes and other baked items, and to creatively interpret a design brief.


The practical elements is not only valuable for those pupils who wish to pursue a career in the hospitality industry but can also be advantageous to those applying do study dentistry or medicine as it demonstrates manual dexterity.


The course content includes the following units:


· Cake baking


· Cake finishing

N 4/5 Fashion & Textiles Technology

This course is experiential and practical based and provides pupils with the opportunity to develop detailed knowledge, understanding and skills related to textile technologies, including the characteristics and properties of a range of textiles and their uses, and to apply this knowledge in practical situations. The practical elements is not only useful for those pupils who wish to pursue a career in the textile industry but can also demonstrates manual dexterity which is useful to those applying to study dentistry or medicine.
