The ice has melted from beautiful Lake Mohawk and sooner than you think we will be sailing. Lightning Fleet Champion Rich Miner (shown in the photo) reports that he saw a power boat out on the water in early March. Some people just can't wait--and who can blame them!

As you also know, we not only like to sail but we also enjoy socializing and enjoying the great food that our members prepare. Last year, Cathy Chute made a terrific White Chicken Chili that was the winning dish in our Chili Cookoff. She got this recipe from her good friend Karen Doubleday (whose son took the Junior sailing classes). The prize for the Chili Cookoff was a gift card to Chili's--pretty clever of Jan and Ian Oldridge who organized the event. And here's the winning recipe:

White Chicken Chili

1 32oz box of chicken broth

2 cans white beans - do Not drain

5 cups cooked chicken

1 16oz jar of salsa (mild, medium or hot, whichever you prefer)

1 8oz block pepper jack cheese, grated

2 teaspoons cumin

2 garlic cloves, minced

black or white pepper, to taste

Cook together.

Serve with corn chips, sour cream and grated pepper jack cheese.

• Commodore’s Cup Regatta and Party – September 1

• Finish Line Party – October 26

• Awards Banquet – December 1

Remember, anyone in the LMCC who owns a sailboat is invited to sail with us in any of our three, open regattas. You can race any type of sailboat that you may own because the regattas are handicapped using the Portsmouth yardstick. Also make note of the announcements in the Papoose for our Junior Sailing School. The sailing school is extremely popular and enrollment is limited. We also will be offering adult and individual sailing lessons for those who are interested. And, if you are looking for a great gift for a sailor or for yourself, to help raise funds for the Junior Sailing Program, Haley Chute had bags made from sails. They are available at Cathy Chute's Lake Mohawk Flower Shop in the plaza.
