1 whole head of garlic

3 teaspoons olive oil

Salt and black pepper

Preheat oven to 400 degrees. Cut the pointed end of the head off - about 1/2 inch down, or enough to expose each clove. On a large piece of heavy duty (or double thickness regular) foil place the head of garlic cut side UP. Drizzle with oil and sprinkle with salt and pepper. Wrap tightly so the seam is on the top. Place in the oven and roast for an hour or until it is very soft and dark golden brown. When cooled, squeeze the cloves from the bottom and the inside should pop right out.
