Ingredients:
Black eye peas (Karamani) - 1 cup
Tomatoes - 3
Onion - 1
Potato - 1
Carrots - 3
Garlic cloves - 3
Corn ears - 1/2 cup
Broth ( Meat or Veg) in liquid, powder or cube form
Spices - Pepper, Thyme, Oregano, Salt
Pasta - 1 cup ( optional if you need more to fill up :) )
Oil
Prep Method:
Dice the tomatoes, onions, potatoes, carrots, and garlic cloves
Cooking Method:
Pressure cook the black eye peas and salt for 6 whistles.
Empty the cooked black eye peas to a different vessel.
In the same pressure cooker, heat a small amount of oil.
Sautee garlic, onion and tomatoes in that order.
Add the diced potatoes, carrots, corn and pasta ( optional).
Add the cooked black eye peas.
Add enough water to cover the ingredients in the cooking pot.
Pour the broth and spices for taste.
Pressure cook for 1 whistle
Serve while it is hot.
